Our oil mill represents the beating heart of the company and the meeting point of tradition and innovation. The olives are processed through a two-stage Mori-Tem plant, with a capacity of about 200 kg per hour, which allows us to operate on small batches and carefully follow each stage of the process. The oil is filtered immediately upon leaving the decanter, a key choice to preserve its freshness, fragrance and stability over time.

After extraction, the oil is stored in stainless steel silos under nitrogen, at a controlled temperature of 17 to 18 °C, so as to protect it from oxidation and maintain its organoleptic characteristics.

All milling and bottling operations are carried out exclusively within our mill, ensuring full control of the supply chain. Bottling also takes place in a protected atmosphere under nitrogen, using Mori machines and dedicated equipment to ensure that each bottle preserves the quality of the newly produced oil intact.
